This absolutely delicious meal can be made in ten minutes…it is my go to for a fast meal and I never tire of the creamy and delicious taste.

Mushrooms don’t just contribute to our basic nutritional needs, they are a functional food, meaning they have a highly beneficial effect on our health and wellbeing.
They are a source of B-vitmains, selenium, potassium and the only source of naturally occurring plant-based vitamin-D, so a great food if you are following a vegan diet.
Mushrooms have been found to improve immunity, have anti-infammatory properties as well as having a positive effect on gut bacteria….pass the funghi!!
Here is our immune-boosting, anti-inflammatory wild mushroom stroganoff…delicious!
1 punnet of wild mushrooms
(we use a mixture of eryngii, shiitake, oyster, buna-shimeji, shiro-shimeji)
For those local to Clevedon, The Veg Box stock a mixed punnet of wild mushrooms.
1 teaspoon of Miso (we use use the Clearspring organic Miso, available in store)
100g of CoYo yoghurt (cultured coconut yoghurt, available in store)
1 tablespoon of coconut aminos (available in store)
Fry the wild mushrooms for 5 minutes in coconut oil. Add a teaspoon of miso and fry for a further 5 minutes. Add the CoYO and coconut aminos. That's it! Sprinkle with toasted seeds or a pinch of chilli. Serve with salad or cauli-rice, sautéed kale or have as an accompaniment.
