This weeks Live Keto Cookery is all about fresh, light and summery food!!
A light and fluffy coconut cauli-rice is the perfect accompaniment to any dish, as a cold salad addition, a side to a curry or used as a base for risotto...so delicious!!
Turmeric and Coconut Cauli-rice
You will need
2 Large cauliflowers
1tsp of turmeric
80g desiccated coconut
3/4 teacup toasted cashews (place cashew in the oven for 5-6 minutes)
A handful of sunflower seeds
A handful of chopped spring onions
½ tsp salt, pepper as desired
Cool, packed with antioxidant and minerals, this light and delicious creation is the ideal way to cool off whilst adding healthy goodness to your body. De-licious!!
CoYo mixed berry, crunchy keto granola and cacao frozen bark
1 tub of CoYo (or full fat natural yoghurt)
A handful of frozen dark berries (raspberries, blueberries or blackberries)
A generous handful of keto granola (such as Raw Gorilla granola)
