200g Soaked Cashew Nuts
50g Nutritional Yeast
1 tbsp Garlic Cloves
2 tbsp Miso
300g Ground Almonds
100g Ground Linseed
120g Coconut Oil
Pinch of Salt
Let's do this!
First cook the mushrooms, peppers, onion, garlic, spinach and miso together until the veggies are soft. While these are cooking away you can make the pastry, simply mix together the ground almonds and linseed then add in the melted coconut oil and the oil and a pinch of salt and mix until you have a firm dough.
For the filling add your soaked nuts and nutritional yeast into a blender and give a quick wizz. Then add in the veggie mix and briefly blend together.
Roll out the pastry into a flat sheet and add the filling in a line along the base of the pastry. Roll the pastry over the filling several times using the paper and slice into your desired length. Use a small amount of nut milk to wash pastry before baking.
Put in the oven at 170 degrees for 13 mins or until golden brown, leave to cool and then enjoy.
