The Great British Keto Bake Off: Fabulous Florentines

The GBKBO is back with Biscuit week and the team have been grinding away at the recipe to make sure she has a snap worthy of Hollywood. This is a super simple recipe that makes a truly fabulous, zesty florentine.

You will need:


300g whole Almonds

1 Orange Zest

50g Organic Butter

100ml Organic Double Cream

1tbs Vanilla Extract

1/2 tbs Low Carb Sweetener (erythritol or xylitol)

150g 100% Montezuma orange and nibs Dark Chocolate


Let's do this!

Split the Almonds into two lots of 150g. In a blender blend the first 150g of almonds until it resembles a very course breadcrumb. Place into a mixing bowl. Add the other 150g to your blender and pulse for a few minutes so that you have chopped almonds (much chunkier than the other 150g!).


Place the butter, cream and all other ingredients into a pan and gently heat, stirring the mix until well combined.


On a flat, lined baking tray, dollop a small amount of the mix (using a cookie cutter as a guide if you're after identical sizes...yes we take note Mr Hollywood! See the video for guidance). Gently flatten the mix and bake in the oven for 10minutes at 180 degrees.


Allow to fully cool (without removing from the tray). In the meantime melt you chocolate ini a Bain Marie and top the florentines. Again allow to fully cool before attempting to remove...the chocolate gives these delicious biscuits stability.


And there we have it... keto florentines, packed with the goodness, flavour and super simple to make!
