Keto Satay Curry & Peanut Butter Cookies!

For this weeks Keto Cookery we are going a little peanut crazy starting with our keto satay sauce, served with low carb noodles we will then be baking keto peanut butter cookies…
This delicious satay curry can be made as a keto vegan or chicken version. It is SO delicious and so simple!
a tablespoon of coconut oil
1 x small onion (chopped)
2 x cans of Coconut Milk
320g Peanut Butter
3 tablespoons of Coconut Aminos
2 teaspoons of tomato puree
1 teaspoon of chilli flakes
1 teaspoon of minced garlic or garlic powder
½ teaspoon ginger
1 teaspoon of ground coriander
Pinch of salt
1 x packet of Bare Naked Noodles
Serve with either cooked, diced chicken and sautéed mushrooms, or mixed sautéed veggies for a vegan option!
Peanut Butter Cookies
300g Ground Almonds
55g sweetener, we use Xylitol
310g Peanut Butter
pinch of salt
135g melted butter
You will need parchment paper and a baking tray.
