Keto Katsu Curry & Raspberry & cream jelly....

This Friday on our Keto Cookery we will be making a family-friendly curry inspired by one of my favourite Wagamama meals...katsu curry!
We will be making the sauce, it is delicious with the Keto Friendly Chicken strips we made on the last segment, or with some stir-fried veggies.
Here is what you'll need for the sauce:
Keto Katsu Curry
2-3 tablespoons of coconut oil (or avocado oil)
1 finely chopped onion
1 x 2.5cm piece of peeled and grated chunk of ginger
1 x teaspoon of turmeric
2 teaspoons of mild curry powder
1 tablespoon of tapioca powder
300ml of chicken stock vegan stock or chicken bone broth
100ml of coconut milk
1 tablespoon of coconut aminos
We will be serving our with Bare Naked Rice (super low carb rice)
1 x packet of Bare Naked Rice
handful of toasted cashews
1/2 teaspoon of turmeric
1 x heap of desiccated coconut
Raspberries & Cream Jelly
240ml of organic double cream or coconut milk
200g of frozen raspberries
6 tablespoons of xylitol or a heap tablespoon of raw honey
80g of grass-fed gelatine powder
Handful extra raspberries for decorating
80ml of water
You will also need a jelly mould!
