This delicious French toast makes a great bread to toast...or slice and fry to create a rich, delicious fat French toast dish.
SO easy to make and freezes well!
You will need:
7 Large Free-range eggs
40g Coconut flour
40g ground almonds
120g melted butter or coconut oil
Pinch of good salt
1 tsp gluten free baking power (we like Doves)
1 tsp cinnamon (optional)
Crack the eggs and mix until well combined. Combine all other ingredients and add to the egg mix. Pour into a well greased and lined loaf tin and bake for 35-40min at 170-180 degrees.
Ooooo, so simple!!
Remove and allow to cool. Slice and then gently fry in butter, ghee or coconut oil and serve with CoYo, fruit compote or bacon & optional drizzle of maple syrup.... et voila!!
