Keto Cookery...Paleo and keto Pizzas and keto lemon muffins
This weeks recipes are delicious home made Pizza's suitable for both keto diets and paleo diets and and amazing keto lemon muffins.

Lemon & Poppy Keto Muffins
Makes 12
Temperature: 170C
Cooking time: 20 minutes
Ingredients
390g almond flour
4 tsp baking powder (we use Doves gluten-free baking powder)
120g Xylitol
3 free-range eggs
300g soured cream (or CoYo for a dairy-free version)
1.5 tsp vanilla extract
3 tsp lemon essence
1.5 tbsp poppy seeds
150ml nut milk of choice (For a commercially made one we like Plenish).
For the topping
Double cream for whipping or CoYo
Lemon zest (unwaxed lemons!)
Paleo & Keto Pizza- makes 10 medium pizzas (bases can be frozen)
Ingredients
100g coconut flour
110g ground golden linseed (or ground sesame seed flour)
100g Psyllium husk (gives it stretch and doughiness!)
4 eggs
100ml of olive oil or avocado oil
400ml of water
1 teaspoon of salt
Topping-
Organic tomato puree (the easiest and most popular topping with the kids!)
Grated cheese or broken chunk of cashew feta for dairy-free option
You will need a rolling pin, a frying pan, parchment paper, a flat baking tray (to cook the pizza)
