Great British Keto Bake Off: Japanese Week, Vegan Sushi


It's Japanese week and we've taken a break from the baking to bring you Vegan, Keto Sushi Rolls! These are quick to make (less than 10 mins) and they are the perfect combination of health and taste. We really want to see what you guys make of this as you can add so many elements to this flexible recipe.

Ingredients


100g Cauliflower Rice

1/2 Ripe Avocado, Mashed

2 tsp Lemon Juice

1 tsp Ground Black Pepper

1 Pinch of Salt

2 Nori Sheets

1 tbsp Vegan Mayonaise

1/2 Cucumber, deseeded

2 Spring Onions

Sprinkle of Sesame seeds

2 tsp Coconut Aminos


Let's do this!


Firstly cook your cauliflower rice and mix in the avocado, lemon juice, salt and pepper (creme cheese for non vegans). Lay out a nori sheet and spread the rice over, patting down to form a solid layer. leaving an inch bare on the sides. Add the cucumber, spring onions (Tuna or Salmon for non vegans) across the base of the rice and spread the mayo over the top. Gently roll the nori sheet over making sure the first layer is tight wrapped around the filling. Once it's completely rolled cut away the excess nori, spread the coconut aminos to the top and sprinkle the sesame seeds over.
